
Fourth of July is always a fun Holiday. Not just because it commemorates our Country’s independence, but because it is always such a fun time to spend with family. This Gluten Free Blueberry and Strawberry Pie is a must for your fourth of July holiday food spread. The strawberries and blueberries go so well together and of course the colors together with the pie crust create the perfect red, white, and blue dessert.
For the pie crust I use the Cup4Cup pie crust mix. I highly recommend using this pie crust mix. It makes it SO easy and you would really never know that it is gluten free! The instructions are all right there on the back of the bag, super convenient. My family, who is not gluten free, swears that you can not taste the difference as well! I use this brand for a lot of my baking and they never disappoint. I made this gluten free blueberry and strawberry pie last year for memorial day and it was a hit, you will not be disappointed! The idea of making a pie can sometimes be daunting for people. However, this recipe really is just SO easy and SO worth the time it takes to prep everything. This pie and my gluten free chocolate chip cookies would be the perfect set up for a festive time full of yummy desserts!

- Simply follow the instructions on the Cup4Cup pie crust mix package, separate the crust into two balls and then refrigerate for one hour
- Chop the strawberries and combine them in a bowl with the blueberries
- combine the fruit with the juice from the zest from the lemon, lemon juice, and ¼ cup of the sugar let this sit for one hour
- drain the liquid from the fruit and then add the rest of the sugar and the corn starch
- Roll out your pie crust mix and put in the pie dish. Gently press the crust to fill the pan and cut the excess crust from the edges.
- put the crust in the fridge to chill
- take out the other pie crust, roll it out on a floured surface and cut out stars
- put the stars in the fridge
- Preheat the oven to 400°
- Take out your chilled pie and stick the bottom with a fork and on the sides. Egg white wash on the bottom of the pie
- add your fruit filling
- add the pie crust stars on the top of the pie
- combine an egg yolk to the egg white and 1 tbsp of almond milk and brush the top of the crust with this mixture
- sprinkle turbinado sugar on the top of the pie
- cover the top of the pie with foil and put in the oven for 40 minutes
- remove the foil and bake for an additional 20 minutes
- Let the pie cool COMPLETELY before serving and enjoy!!
