Chicken Alfredo has always been one of my favorite things to eat. There is just something so comforting about creamy cheese and noodles. This Easy Dairy Free Chicken Alfredo recipe is so delicious. This is one of those recipes that has taken me FOREVER to figure out. But, I finally did it. And it was definitely worth the wait.
Alfredo was one of those meals that made me first realize I was lactose intolerant. I think it starts that way for most of us. The really rich, creamy foods are what affect those of us who are lactose intolerant the most. That is because usually hard cheeses and yogurt have less lactose in them so these creamy food items tend to create more of an impact. Developing this recipe was hard you guys. It took many trials and many errors until I got it right. But the result is wonderful! This dairy free chicken Alfredo recipe is so easy. The key to making sauces when trying to make something dairy free is to use cashews. They have the perfect nutty flavor that mimics cheese and they are soft. So, when you soak them in water and blend them it creates a really creamy texture.
How to Make the Dairy Free Alfredo
I’ve said it before and I will say it again this Easy Dairy Free Chicken Alfredo recipe really is so simple. There are only six ingredients and that is INCLUDING the noodles and chicken. I get the gluten free fettuccine noodles from Trader Joes. But you can use any noodles for this recipe. The only prep needed for this is to soak the cashews in hot water for fifteen minutes.
Step 1: Place the Cashews in a bowl with hot water. Let them soak for a minimum of fifteen minutes.
Step 2: While the Cashews are soaking. Slice up one chicken breast into thin slices and heat a pan over medium heat with some oil.
Step 3: Add your chicken and garlic to the pan and cook until the chicken is cooked. Add salt and pepper to taste and reduce the heat in your pan for now.
Step 4: Boil your water
Step 5: While the water is getting ready to boil, drain your cashews and add them to a blender with one 14oz can of coconut milk and nutritional yeast. Mix until smooth.
Step 6: Place your noodles into the boiling water and cook.
Step 7: Heat your pan back up until hot – I did medium-hot heat. Pour your sauce into the skillet little by little. Cook the sauce until it starts to thicken and darken in color slightly. Repeat this step until all your sauce is in the skillet.
Step 8: Add in the cooked noodles to the skillet and mix. Top with parsley and more salt and pepper if desired.

Easy Dairy Free Chicken Alfredo
Ingredients
- 1 tbsp olive oil
- 1 chicken breast
- 2 garlic cloves
- ⅓ cup cashews
- 1 14 oz can of coconut milk
- 3 tbsp nutritional yeast
- salt and pepper to taste
Instructions
- First, place the cashews in a bowl with hot water. Set aside for a minimum of fifteen minutes
- While the cashews are soaking, chop your chicken breast into thin slices and heat a large non stick skillet over medium heat with your oil.
- Add in your chicken with the garlic cloves and cook until the chicken is all they way done. Reduce the heat for now and add salt and pepper to taste.
- start boiling your water for the noodles.
- while your water is heating up, drain the cashews and add the cashews, coconut milk, and nutritional yeast to a blender. Blend until smooth.
- Add your noodles to the boiling water and heat your skillet back up to medium high heat with the chicken in it.
- Little by little add your sauce from the blender to the skillet. Cook until the sauce has thickened and turned a slightly darker color. Repeat this step until all of the sauce has been added.
- Add your noodles to the skillet. Toss with some more salt and pepper and enjoy!!
