Easy Dairy Free Chicken Alfredo

Ingredients
  

  • 1 tbsp olive oil
  • 1 chicken breast
  • 2 garlic cloves
  • cup cashews
  • 1 14 oz can of coconut milk
  • 3 tbsp nutritional yeast
  • salt and pepper to taste

Method
 

  1. First, place the cashews in a bowl with hot water. Set aside for a minimum of fifteen minutes
  2. While the cashews are soaking, chop your chicken breast into thin slices and heat a large non stick skillet over medium heat with your oil.
  3. Add in your chicken with the garlic cloves and cook until the chicken is all they way done. Reduce the heat for now and add salt and pepper to taste.
  4. start boiling your water for the noodles.
  5. while your water is heating up, drain the cashews and add the cashews, coconut milk, and nutritional yeast to a blender. Blend until smooth.
  6. Add your noodles to the boiling water and heat your skillet back up to medium high heat with the chicken in it.
  7. Little by little add your sauce from the blender to the skillet. Cook until the sauce has thickened and turned a slightly darker color. Repeat this step until all of the sauce has been added.
  8. Add your noodles to the skillet. Toss with some more salt and pepper and enjoy!!
