Gluten Free Zucchini Fries – So Easy

These crispy gluten free zucchini fries are absolutely delicious. They are so easy to make and are the perfect way to get in some extra veggies. I only use two zucchinis and it makes a whole pans worth! And even though these are vegetables, these fries actually are super filling. For the gluten free breading I use Kinnikinnick panko style bread crumbs. These are my favorite bread crumbs to use. They have a great flavor and texture and can be found at most grocery stores.

The prep time for these gluten free zucchini fries is minimal. I will usually cut the zucchini in half so that it is shorter and then slice them so they resemble fries. Then I put them in a bag and coat them with some gluten free flour (I used bob’s red mill one to one flour). I would not skip this step as it makes the final breading stick better to the fries. Zucchinis hold a lot of moisture so this helps to absorb some of that liquid.

These fries are the perfect addition for almost any meal! We like to enjoy them with burgers or as an appetizer, just make sure you have your perfect dipping sauce. You could also have these alongside the dairy free buffalo chicken dip and they would be the perfect appetizer combination for watching a game or having people over. Ingredients Method

Ingredients
  

  • 2 zucchinis
  • 1 package of kinnikinnick panko crumbs
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tbsp gluten free flour I used bob's red mill 1 for 1
  • 1 tbsp almond milk
  • 2 eggs

Method
 

  1. cut the zucchinis in half short wise
  2. then chop the zucchinis long ways to resemble fries
  3. place the chopped zucchini in gallon size bags with a tbsp of gluten free flour. Shake the bag to ensure they are evenly coated in the flour
  4. combine the garlic powder, salt, and pepper to the panko crumbs
  5. in another bowl mix the eggs and almond milk together
  6. spray a baking sheet with oil
  7. preheat the oven to 400°
  8. dip the zucchini slices in the egg mixture and then place in the panko until evenly covered in the bread crumbs
  9. repeat this step and place each slice on the baking sheet. Repeat this until all zucchini slices have bread crumbs on them.
  10. bake in the oven for 25 minutes or until desired level of crispiness
  11. ENJOY
