cut the zucchinis in half short wise
then chop the zucchinis long ways to resemble fries
place the chopped zucchini in gallon size bags with a tbsp of gluten free flour. Shake the bag to ensure they are evenly coated in the flour
combine the garlic powder, salt, and pepper to the panko crumbs
in another bowl mix the eggs and almond milk together
spray a baking sheet with oil
preheat the oven to 400°
dip the zucchini slices in the egg mixture and then place in the panko until evenly covered in the bread crumbs
repeat this step and place each slice on the baking sheet. Repeat this until all zucchini slices have bread crumbs on them.
bake in the oven for 25 minutes or until desired level of crispiness
