
Making Christmas cookies has always been a family tradition. Let’s be honest, I think it is for most families. As a little kid we used to all sit around the table and decorate our sugar cookies for Santa. I am happy to carry on this tradition and will be continuing on with our future children. These Gluten Free Christmas sugar cookies are the perfect AND easy thing to make this holiday season. I know it is a little late, but the cold weather this weekend will be perfect for this fun activity!
So I must be honest with you all, I set out on this mission to make gluten free roll out cookies… obviously it did not work out. BUT this recipe for gluten free Christmas cookies is so good I am going to post about them instead. This recipe also makes a lot, about 55 cookies worth. So, if you are wanting a last minute gift to give to those neighbors or friends then this would be great idea and they will love it! I used a variety of Christmas sprinkles but feel free to use whatever sprinkles you want. For the gluten free flour I used Kirkland Signature Almond Flour. I love using this flour and you can always find it at Costco! I hope you guys enjoy these cookies as much as we do. PRO TIP: make sure to enjoy them with a nice cold glass of milk ( or almond milk 🙂 ) in a good Christmas mug.

Ingredients
Method
- add softened butter and sugar to bowl and mix until smooth
- add egg and vanilla and beat until smooth
- Mix in the dry ingredients
- put in fridge to chill for at least 1 hour
- preheat oven to 400
- roll the dough into small ball (ping pong size) and roll in sprinkles
- place on baking sheet and bake for 10-12 minutes
