
I love a good salad. Especially when they have good, filling grains in them. That is why I love this easy quinoa salad recipe. It is the perfect summer salad. It is refreshing with the tomatoes and the cucumbers and onions give it a nice crunch. You are going to LOVE this recipe.
Since I have been working at home it has been really difficult for me to come up with new lunch ideas. I usually like to bulk make things and eat on whatever I cook throughout the week. The hard thing about that is that a lot of things can get soggy as the days pass and honestly just lose their appeal. Especially, when you are reheating items. I have not found this to happen with this quinoa salad recipe. It stays fresh and is super filling.

Lets talk about Quinoa for a second and why I love it so much. Quinoa is a grain/seed. It can be used interchangeably in a lot of recipes that call for rice or couscous. Why change out ingredients for Quinoa you ask? Because quinoa is PACKED with fiber, protein, and it is gluten free. This many nutrients in one specific food is really hard to beat. Now, pair it with some vegetables for additional vitamins and you have a super healthy meal that will leave you full and is so good for you! You can really use any quinoa for this recipe. I use this Norquin Tricolor Quinoa that you can just boil in the bag. It is super easy and done in only 15 minutes. I found this at Costco but you can also buy it on Amazon.

Method
- Cook the quinoa according to whatever instructions are on your bag
- once you have drained the quinoa place in the freezer to cool (about 15 minutes)
- chop your veggies
- once the quinoa is cool, pull out of freezer and add your veggies
- add in the salt, pepper, and garlic powder – toss
- add in the oil and vinegar – toss
- ENJOY
