Easy Quinoa Salad Recipe

this easy quinoa salad recipe is the perfect summer salad. It is refreshing and the veggies give it a nice crunch. You are going to LOVE this recipe.

Ingredients
  

  • ½ cup dry quinoa (or 1 pouch if using the Norquin bags) or 1 cup of cooked
  • ½ cup cherry tomatoes - halved
  • ¼ red onion - diced
  • cup chopped cucumber
  • ½ tsp garlic powder
  • 1 tbsp red wine vinegar
  • 1 tbsp avocado oil
  • salt and pepper to taste

Method
 

  1. Cook the quinoa according to whatever instructions are on your bag
  2. once you have drained the quinoa place in the freezer to cool (about 15 minutes)
  3. chop your veggies
  4. once the quinoa is cool, pull out of freezer and add your veggies
  5. add in the salt, pepper, and garlic powder - toss
  6. add in the oil and vinegar - toss
  7. ENJOY
