
Ever since I found out I was allergic to dairy and gluten I have been on a mission to create the perfect gluten free chocolate chip cookie recipe. I have to admit, baking has never been my strong suit. Previously, I would rely heavily on pre-made mixes and slice n’ bake cookies for any sweet craving I had. But, when I developed a gluten allergy and realized that these conveniences for people like me is very few… I had to, for the sake of cookies, improve on my baking skills. I thought it was a noble cause. So, after many trials and many errors… I have finally developed an easy Gluten Free and Dairy Free Chocolate Chip Cookie.

Developing the Gluten Free Recipe:
Now, there are many different options these days for gluten free flour and dairy free alternatives. I have come to the conclusion that for chocolate chip cookies my favorite flour to use when avoiding wheat is Almond Flour Blanched. I think it creates a better texture for the cookies, resulting in a better flavor. For my dairy/butter I use country crock’s plant based butter with almond oil. It is easy to find and a cheaper alternative than many of the oils that other dairy free recipes will call for. Finally, for the chocolate chips. In the past it has been difficult for me to find dairy free chocolate chips. Recently, I have found a brand I love and it is becoming more common to find at your local grocery store. The brand is Enjoy Life and it is both gluten free and dairy free. Best of all, you can find it at most grocery stores or on Amazon.
Gluten Free and Dairy Free Chocolate Chip Cookies
Ingredients
Method
- Mix the softened butter and coconut sugar in a bowl with the handheld mixer
- Add the vanilla and egg and mix until smooth
- Next, add the dry ingredients and mix for about 2 minutes or until smooth
- Add the bag of chocolate chunks and mix in with a baking spatula
- Put the dough in the fridge for about an hour
- This will make for a better texture when the cookies come out and will minimize spreading
- Preheat the oven to 350 degrees
- Place the cookies on a cookie sheet and bake for 10 to 12 minutes
