Gluten Free and Dairy Free Chocolate Chip Cookies

Enjoy these delicious and soft Chocolate chip cookies that are Gluten Free and Dairy Free!

Ingredients
  

  • ½ cup Vegan Butter (Country Crock) Softened
  • ¾ cup coconut sugar
  • 1 egg
  • ½ tsp salt
  • ½ tsp baking soda
  • 2 tsp vanilla extract
  • 2 ¼ cup almond flour
  • 1 bag enjoy life chocolate chunks

Method
 

  1. Mix the softened butter and coconut sugar in a bowl with the handheld mixer
  2. Add the vanilla and egg and mix until smooth
  3. Next, add the dry ingredients and mix for about 2 minutes or until smooth
  4. Add the bag of chocolate chunks and mix in with a baking spatula
  5. Put the dough in the fridge for about an hour
  6. This will make for a better texture when the cookies come out and will minimize spreading
  7. Preheat the oven to 350 degrees
  8. Place the cookies on a cookie sheet and bake for 10 to 12 minutes
