Gluten Free Blueberry Crumb Cake

Ingredients
  

The crumb topping
  • ¼ cup brown sugar
  • ¼ cup Gluten Free Flour
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ cup vegan butter (slice in cubes)
Cake Batter
  • 1 ½ cup Gluten Free flour
  • ½ tsp baking soda
  • tsp baking powder
  • ½ tsp lemon zest
  • ½ cup vegan butter - softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • ½ cup almond milk

Method
 

  1. preheat the oven to 375 degrees
Crumb Topping
  1. In a small mixing bow combine the brown sugar, salt, cinnamon, some flour, cold cubed vegan butter. Mix together with hands until it crumbles and place in the fridge until you need to use it.
Cake Batter
  1. Mix together dry ingredients for the cake
  2. In another bowl beat together your softened butter, vanilla, sugar, eggs and lemon zest
  3. To the wet ingredients slowly add your dry ingredients and almond milk
  4. Fold in your blueberries, Grease as square baking pan and pour in your cake batter (Note: it will be very sticky). Add the crumbs in the fridge to the top and bake for 45 minutes! It is that easy!
  5. let cool before serving
